Heinz Tic Tac Toe Cookies

Over the past two years, Austin and I have acquired a lot of food storage items due to couponing. We decided this summer we were going to try to use up our food storage and try new recipes. One of the items we noticed we have a LOT of is ketchup.

So what did I do? I googled ketchup recipes and found the recipe page for Heinz Ketchup. We tried the Tic Tac Toe Cookie recipe and modified it by using oat flour instead of wheat flour. You can make your own oat flour by putting your rolled oats in a food processor or blender. Pretty neat, huh?! Anyway, here is the recipe if you would like to try it. We think they are pretty yummy!

Ingredients
1-1/2 cups Flour
1/2 teaspoon Baking soda
1/2 teaspoon Salt
3/4 cup Chunky or creamy peanut butter
1/2 cup Softened butter or margarine
1/2 cup Granulated sugar
1/2 cup Firmly packed brown sugar
1/4 cup Heinz® Tomato Ketchup
1 Egg
Preparation
Preheat oven to 375 F.
Sift together flour, baking soda, and salt. Set aside.
Cream together peanut butter, butter or margarine, sugar, and brown sugar until light and fluffy. Add Ketchup and egg; beat until well mixed.
Thoroughly blend flour mixture into peanut butter mixture.
Drop by Tablespoonfuls onto baking sheets lined with parchment paper. With fork dipped in flour, press cookie flat, making impressions in two directions.
Bake 8 to 10 minutes or until golden brown. Cool on wire rack.

I have to be honest...I can't imagine a cookie with ketchup in it! :) We'll have to try it out. I think the kids would get a kick out of it.

That's awesome! I love ketchup....and I love peanut butter cookies. I will have to try that out sometime! I haven't been reading people's blogs lately, because I have been in the midst of a huge adventure (dishonest landlady, dying car, moving temporarily to a cousin's, finding a new place to live and a new car etc) but I will blog again once I get moved in, but I had to tell you.. I had a friend one time who was a vegetarian. She told me that if you put peanut butter on a hamburger bun instead of the meat, and then add all your cheeseburger fixings, that it tastes like a real hamburger, and NOT like the peanut butter! I'm not sure if I believe her, because I have never been brave enough to try it, but this recipe post reminded me of that conversation! :O)

Hmmm, sounds crazy, but we might have to try it for ourselves. We buy the #10 can of ketchup because it's SO much cheaper than retail, so we often have lots on hand. =) One of our fav ketchup recipes is sweet & tangy meatballs. Let me know if you'd like the recipe. Also, did you know that ketchup freezes really well? I freeze it in old peanut butter jars and then just let it sit in the fridge overnight before using it to refill the squeeze bottle, etc. {I don't recommend freezing an unopened container. ;)}
